Recipe to prepare Allam pachadi /ginger chutney

Andhra /Telangana style allam pachadi or ginger chutney

Ingredients : 

  • Ginger 250 GMs
  • Garlic 10 cloves
  • Salt to taste
  • Sugar 4 tbsp
  • Tamarind 2 marble size balls boiled in water and made into a paste
  • Red chilli powder 5-6 tbsp depending on spice level
  • Kashmiri red chilli powder 2 tbsp for colour & its own taste
  • Methi seeds dry roasted 3-4 tbsp
  • Curry leaves 2 springs
  • Mustard seeds 2 tsp
  • Oil 1 cup

Method :

  1. Roast the methi seeds dry
  2. Wash peel n cut ginger into small pieces (ensure it is dry )
  3. In the mixer first grind methi seeds and then add the ginger and red chilly powders
  4. Grind coarsely
  5. Now add the tamarind paste , sugar and salt and grind again for 30 secs
  6. In the same PAN pour the remaining oil for tadka
  7. Add the mustard , curry leaves and finely chopped garlic
  8. Sauté till raw smell goes
  9. Add the ground paste to the tadka
  10. Sauté for 2-3 mins mixing properly
  11. Check for salt , sugar , spice levels
  12. If required adjust accordingly
  13. Cool & store in glass jars
