Soorna Kuta. A typical GSB Konkani Community dish made up of Yam.
Take a small cup of yam chopped into small cubes .Add salt and keep it aside.
Take little oil and roast 1\2 tsp of mustard and a small pinch of hing.Keep it aside. now take appox 1 cup of grated coconut, 4-5 red chillies and a peanut sized tamarind and grind it into a paste. when the masala is about to be done add the mustard and hing and give one more turn to mix it into the masala in the mixer grinder.
Now take some oil.Squeeze the water from yam and fry them in oil till it turns crispy.
Now add the fried yam into the masala .Add salt as per ones taste.
Give a seasoning of mustard seeds and curry leaves. This dish is not boiled . Add water to get the desired consistency and the dish is ready.
