Mini Dhirdi ( mix flour pancakes) with Kairichi Chutney ( Raw mango chutney) authentic GSB community Recipe
Mini Dhirdi ( mix flour pancakes) Recipe
1 cup Rice flour
1/2 cup Udid dal flour or whole wheat flour
1/2 cup Gram flour ( besan)
1/2 tsp fenugreek seeds and 1/2 tsp cumin seeds dry roasted and ground coarsely
1 onion finely chopped
6 to 7 sprigs of coriander leaves chopped fine
2 green chillies chopped fine
Water as required
Salt to taste
Combine all flours , fenugreek and cumin powder, salt , green chillies, coriander leaves and water to make batter of dropping consistency ( dosa batter consistency). Set aside for half an hour.
Heat a dosa pan , add a ladle of the batter and spread it on tava. Don’t make it too thin or thick . Now sprinkle some oil on the sides and cover the dosa pan with a lid, till the pancake is brown on one side.Then turn on the other side and let it cook the same way on the other side as well.
Serve it hot with chutney of your choice.
NOTE: Dhirdi taste best when served hot.
Raw Mango chutney ( Kairichi Chutney) Recipe :
1cup grated coconut
1/4 cup raw mango skin peeled and grated (if the mango is very sour use less)
2 to 3 green chillies(adjust to taste)
1/4 tsp cumin seeds
Salt to taste
2 sprigs of coriander leaves
A pinch of sugar
Grind the above ingredients along with very little water coarsely.
Goes very well with dal rice , dhirdi and dosas too.
