Recipe for GSB konkani special Tendle Bibbe Upkari/ Ivy Gourd tender cashew stir fry…!!

Ingredients :
250 gms Tendle/Ivy Gourd washed well
30 – 35 whole Cashews
3 tbsp freshly grated Coconut for garnish
Salt to taste

For seasoning :
1/2 tbsp Coconut Oil
1 tsp Mustard seeds
1 sprig of Curry leaves
2 Green chillies
1 Red chilly
Pinch of Hing

Recipe :
Soak the cashews in hot water for 2 to 3 hours.
Chop the ends of the tendle and slice into thin long pieces.
Heat coconut oil in a kadai and splutter mustard seeds. Add curry leaves, green chillies, red chilly and hing, and fry for few seconds.
Add tindora slices and {drained} cashews along with little water and salt.
Cover and cook till the tendle changes colour and cooks & cashews turn soft.
Garnish with freshly grated coconut.
Serve as an accompaniment with rice and Dalitoy.
