Recipe for GSB Konkani community special dish Vaingana sagle / brinjal masala
small vaingans justcut partially criss cross and put into water for about 20 minutes.
2 medium size Onion sliced
2 tomato diced.
for gravy in a tadka pan fry coriander seeds2tsp in a little oil let it cool.
For half a coconut grating add fried red chillies 5/6 a little tamarind and fried coriander seeds don’t grind smooth not too coarse adding little water.
Dry vaingana on a clean cloth now add salt to the masala mix and stuff into vaingana.
in a kadai add 3 tsp of oil add sesame seeds curry leaves let it splutter then add onions when it becomes transculent add tomatoes fry well then place the vaingans into the tadka leave for two min on medium flame now mix a little water into left over masala and put into pan don’t mix close lid simmer for 5 min then check for salt add a little jaggery mix mildly cook on slow flame its ready.
Can make this with gool, capsicum,ladies finger(bhendi) stuffed.
Note: onion is optional.
