2 medium sized bittergourd (I usually buy the frozen bittergourd to make my life easy smile emoticon )
1/2 tsp salt
Oil for deep frying
2 cups natural yoghurt(curd)
1 cup sour cream
5-6 green chillies sliced thinly
2 tsp oil
1/2tsp mustard seeds
5-6 curry leaves
1 tbsp capers
1.Remove the bittergourd seeds.Thinly slice or chop bittergourd. Sprinkle with salt and keep aside for 1 hour. Now wash it under cold water and squeeze liquid out.This reduces bitterness.
2.Heat little oil and fry slices until browned and a little crisp. Allow to cool completely.
3.Mix yoghurt, bittergourd,sour cream and salt.
4.Place in a serving bowl. Heat oil in a small pan and add mustard seeds.
5.When seeds splutter,add green chillies. Stir for 5 seconds.Pour over the raitha.
6.For taste varaiation,fry capers in little oil and add it to the raitha.
7.Serve hot with rice or chapathi.
* u can prepare lady finger (bendi roast) the same way.
