- Take a pan add 3 tbsp Oil,1 tbsp mustard seeds ,add some cashew, 1/2 tbsp cumin1/2 tbsp Hing ,Few curry leaves ,saute & splutter
- add green chillies ,ginger, saute well, grated carrot, turmeric, saute for 2mins it contents shrinks slightly
- add 2 cup Rava/suji roast low flame keep roasting 5 mins.Turns aromatic cool completely.
- Add curd / yogurt 3/4 cup whisked, coriander leaves, salt, one pinch sugar mix it well.
- if batter is too thick add half cup of water and mix well smooth consistency. Rest 15 mins till water is absorbed
- add 1/4 tbp Eno ( fruit salt) mix gently turns frothy rava batter.
- grease Idli plate with oil and add batter into plates. and steam for 15 mins.
- Ready to serve soft fluffy Rava Idli with coconut chutney .
