Recipe to prepare tausali / Cucumber Idli

Ingredients :

1 Cup grated cucumber.. (I used the cucumber with dark skin). Do not squeeze out the water. It has to be retained.

1 Cup grated Jaggery
1 Cup Semolina or Rava. This rava should be lightly roasted in 1/2 tsp ghee.
1 Cup grated fresh Coconut.
Handful of cashew but pieces
Pinch of salt.

Method:
Take a big bowl. Mix all the above ingredients nicely and keep it for at least 1 hour.

After and hour or so, mix well again. By now the semolina absorbs all the cucumber juice.

Take a steel thali or any round mould. Grease it with ghee and pour the above mixture in it. Spread it evenly but do not press. Steam the above mixture for about 15 – 20 mins or till done. When cool cut in squares or diamond.

This mixture can be steamed in idli cooker as we steam idlis.
