Karela stir fry Sabzi(Without Onion/Tomatoes)
2-3 Medium sized Karelas,
Tempering: 1 tsp mustard seeds, 1 tsp jeera, 1 dried red chilli ( cut into pieces)
Masalas: 1 tsp each of Turmeric and Red chilli powder.1-2 tsp of Garam masala
Salt and Sugar, 1 tbspn Tamarind pulp
Chopped coriander leaves for garnishing
Preparation: Wash the karelas thoroughly and then chopped it thin circles (Dont remove the spines or seeds). Take the chopped karelas in a container, add pinch of salt and turmeric, mix well, and close the lid and keep this for 10 minutes
Then squeeze them and take it out in a plate.
Meanwhile, in a lukewarm water, soak a small piece of tamarind to get its pulp
Procedure: Heat oil in a pan, add the mustard seeds, when they start popping, lower the flame and add cumin seeds, Then add all the masalas, saute for 2-3 minutes, and add the karelas, and toss well, and let the masalas properly coat the karelas, add the tamarind pulp, add salt and sugar, mix well
Close the pan with lid and cook it karelas are done.
Keep on checking, add water if required,
Garnish with coriander leaves and serve with phulkas.
