Kashi Halwa is a sweet dessert prepared from Ash gourd and quite famous in coastal part of karnataka
3 cups grated ashgourd
1 cup sugar (Increase or reduce as per taste)
1/4 cup ghee
2 tsp cardamom powder
1/4 cup cashews fried in ghee
Put the grated ashgourd in a pressure cooker and cook it for 1 whistle
Transfer the cooked ash gourd in a non stick kadai and fry it till it becomes dry.
Then add the sugar and cook till the mixture becomes dry again and turns slightly brown.
Add the ghee, cardamom powder and cashews. Mix well.
Cook for another 5-7 minutes and serve hot.
