Recipe for GSB konkani community special spicy pova upkari by Anu Nayak

Ingredients :

2 or 2-1/2 cups pova (flattened rice)
2 cups freshly grated coconut
1 small onion finely chopped
1 tbspn chili powder
1 tbspn coriander powder
2 tbspn powdered sugar or jaggery
salt to taste

For tempering:
1/2 teaspoon mustard
2-3 sprigs curry leaves
2-3 teaspoons oil

Method :

1. In a bowl add grated coconut, chilli powder,coriander powder jaggery or sugar and salt to taste. Mix it well squeezing the coconut with your hand.
2. In a pan heat the oil and add the mustard. When it stops spluttering add the curry leaves and fry them on a medium heat taking care not to burn them. Pour this tempering into the bowl.
3. add the beaten rice to the above mixture and give it a good mix
4. Serve with tea or coffee
